Recipe Swap: Chocolate Sauce

This recipe has become one of my “go-to” recipes when I need to make something quickly to take to a pot luck dinner at church, for small group, family dinners, etc. I make a chocolate bunt cake (usually Devil’s Food or a HM chocolate cake – check out Gayle’s site recipes for a good one) and then pour this sauce, very warm, over the still warm cake. It makes for a very rich, moist, and delicious dessert that takes very little time to make. Everyone loves it and asks for it! They think that I’ve spent lots of time in the kitchen slaving away when the stove/oven did most of the work for me.

Chocolate Sauce

Yield: 3 cups

1/2 cup butter
3/4 cup Cocoa
1 3/4 cups sugar
A dash of salt
1 can evaporated milk (12 oz)
1 teaspoon vanilla

In a medium sauce pan, melt butter over medium-high heat. Add cocoa and stir until smooth. Add sugar, salt, and evaporated milk, and stir until well blended. Continue stirring until mixture comes to a boil. Beat with whisk until smooth. Remove from heat and stir in vanilla. Serve warm over cake, ice cream or other desserts.

Cover and refrigerate left over sauce.

Reheat: Microwave on high for a few seconds at a time until warm.

Variations:

Chocolate-Nut Sauce: At the end of cooking, stir in 1 cup of coarsely chopped toasted nuts.

Chocoate-Mint Sauce: Stir in 1/2 teaspoon peppermint extract with vanilla extract.

Egg Incubation – round 2

I forgot to post this last week, but I set some more eggs last Monday night, so my 21 day count started Tuesday.

I put 42 eggs in, but I found one that had a crack, so I now have 41. I’ve also had 1 day that my temps rose extremely high (114.8*) EEEKKKK! It should be 99.5* to 100.5*. I cooled them down as quickly as possible. I’m now praying that when I candle them on Thursday (day 10) that I will still see veins.
These are due to hatch around June 22nd! I’ll keep you posted on the candling results on Thursday!

Personal Grocery Challenge – Week 1 Report

I’m happy to say that I’m not doing to bad so far. My total for the month so far sits at $107.44. I was hoping for it to be a little lower, but I ended up sick last week and bought extra orange juice to drink, plus we had VBS and we were asked to bring in something to help feed the volunteers, so I picked up a few things there that I normally would not need. Thankfully, we’re doing well on everything else and should only need milk this week.

I’m making a batch of bread today, as well as some rolls. My menu is planned for the week (except for 1 day and I just could not think of anything – but I will). I got to carry over a lot of my meal plan from last week to this week since they did feed the volunteers last week. That was nice. I was dreading coming home late and still having to fix supper, and I refused to eat out every night.

I am so thankful that God has provided us with so much. I cannot imagine how we could make ends meet sometimes if it wasn’t for the daily guidance that He provides. He is truly awesome.

Onto a new week and a continuation of my grocery budget challenge for June! Remember, my goal is to spend $300 for the 5 of us for the entire month.
