Menu Plan Monday: 03/30/09

Where has the year gone?  It’s hard to believe that we’re getting ready to start April already!

Here’s my menu for the week:

Breakfast

  • Amish Baked Oatmeal
  • cereal
  • pancakes from the freezer
  • muffins from the freezer
  • scrambled eggs

Lunch:

  • packed lunches for the kids and Brian of either sandwiches or leftovers
  • me – either sandwiches or leftovers

Dinner:

  • Biscuits & Gravy, bacon, eggs, & possibly chocolate gravy
  • Crock pot BBQ – either chicken or ribs
  • BBQ Sandwiches
  • Spaghetti with sauce and garlic bread
  • Spiced pork chops
  • Homemade Pizza
  • Crock pot chicken and potatoes with homemade rolls

That’s the plan anyway.  We’ll see what happens with Brian supposed to be installing the dishwasher this week and our getting new gas lines ran.  This menu could drastically change.

Menu Plan 03/23 – 03/29

Since I had one sick last week and now have 2 sick this week, plus the kids are on spring break, I’m definitely going to make this week easy, as well as carry a few meals over from last week. Here it is, in no particular order:

Breakfast

  • Cereal
  • Banana muffins (in freezer)
  • fresh fruit with homemade Dulce de Leche
  • pancakes (in freezer)

Lunch

  • Sandwiches
  • leftovers

Dinner

  • Poor Man’s Soup (my grandmother’s depression-era soup recipe)
  • CP pinto beans
  • Refried bean burritos
  • CP Chili
  • Pancakes, bacon/sausage, eggs
  • Tacos or Salmon patties
  • CP Roast with veggies

This week should be interesting with the kids passing this wonderful flu-like virus around. I’m really glad it’s not the flu itself, and that it’s spring break and they can just concentrate on resting and getting better. We’ll see how well the menu works and how much changing around I’ll be doing again.

I’m really looking forward to making my grandmother’s soup this week. It’s been one of my all time favorite meals ever since I was little! I’m very thankful that she has passed on the recipe to me. But I’ll still have her make it for me any time I can. There’s something about your grandmother making your favorite meals that makes them really special (I don’t care how old you are!).

Here’s my menu plan for the week:

Breakfast:

Lunch:

  • Sandwiches
  • left overs

Dinner:

  • Chicken Noodle Soup
  • Enchiladas
  • Spaghetti & sauce w/ HM garlic bread
  • CP pinto beans
  • Refried bean burritos
  • CP Chili
  • L/O’s (Sunday)

This is subject to change since my son is home sick today. We’ll just have to wait & see what the week holds. But, this is where flexibility comes in. Be ready to adjust your menu when circumstances change.
