Menu Plan: 11/28 – 12/04

Thanksgiving

Well, I never did make it back here to post about how I prep ahead for  Thanksgiving dinner.  Things just got too hectic around here.   But, maybe I can for our Christmas dinner, even if it is on a smaller scale.  Last week’s menu worked out really well.  We had enough leftovers to give us all a decent meal on Wednesday, which saved us from the usual take out that ends up happening every year the day before a big holiday dinner.  I’m very thankful for that.  Not only does it save us money, but it is also much better for us. 

This week’s menu is a bit up in the air since the stomach bug has officially hit our household.  So far, just one, but it has to start somewhere.  I’m praying that it ends there, but I do have my doubts.  I have a feeling that it will at least run through  all the kids.  But, I’m stocked up on Sprite, crackers, popscicles, tangerines & oranges, chicken broth, and few cans of chicken noodle soup.  I plan to try to make some, but in case I end up getting it myself, I would like to have a few cans on hand that can be fixed easily when I do start to feel better.  I also have a little bit of bread but will be baking some more Tuesday. 

So, here’s what’s kind of on the agenda for this week:

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers
  • Soup

Dinner:

  • Thanksgiving Pot Pie (using leftovers)
  • Vegetable Stuffing Bake (again, using leftovers)
  • Homemade Chicken Noodle Soup
  • Ham & Bean Soup
  • Spaghetti with sauce and garlic bread
  • Leftovers (from this week’s meals)
  • Saturday, we’ll be eating dinner out.

Again, this is subject to change due to potential illness this week.  I’m just praying that this is short lived, but it seems to be taking anywhere from 48 to 72 hours from the time you’re exposed until the time symptoms start to occur, so we shall see.

Week Of Thanksgiving Menu Plan: 11/21 –11/27

Well, Thanksgiving is officially here and, like many other households, Monday through Wednesday will be used to prepare ahead for the big day.   I like to start prepping as much ahead as possible so that when Wednesday rolls around, I don’t feel so overwhelmed, and so that I’m not up all night trying to get everything done.  So, to make meals easier this week, I will be cooking simple dinner meals on Monday and Tuesday, and plan to have leftovers on Wednesday.  This frees me up from having to worry about preparing another complete meal in the middle of trying to prepare for our family’s Thanksgiving dinner on Thursday. 

Here’s what my meal plan will look like this week:

Breakfast:

Lunch:

  • Sandwiches
  • some leftovers
  • ???? Whatever we can find Monday – Wednesday

Dinner:

  • Sunday: Crock Pot Chicken faijta quesadillas, Spanish rice, and corn & black bean salsa
  • Monday:  Crock Pot  Chili
  • Tuesday:  Parmesan Chicken, mashed potatoes, peas, corn, & rolls
  • Wednesday:   Leftovers (chicken fajita quesadillas, Spanish rice, parmesan chicken, & chili)
  • Thursday:  Thanksgiving dinner
  • Friday:  Leftovers (boy will there be leftovers! )
  • Saturday:  Dinner with my parents

So, a busy week, but I’ll have a couple of days off, which will be nice!

Thanksgiving
I can hardly believe that Thanksgiving is just a week and a half away.  This year has just flown by for me.  This week and next week will be full of meal preps for me since we will be having our church’s Thanksgiving dinner this coming Sunday (11/21/10), and I have volunteered to cook a turkey and dressing as well as probably bring another dish or two.  Then, next week, I’ll be prepping and cooking for our Thanksgiving dinner here.  A busy time of year, but my favorite!  So, most of my menu plan will be pretty simple so that it frees me up to keep up with all the rest of the things that I need to get done.  In fact, my Crock Pot may be working overtime!  Thank goodness we’re on such great terms and it loves to cook as much as I do or I’m sure I’d be left in a bind!
Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • (Monday)  Crock Pot pinto beans with cornbread and fried potatoes
  • (Tuesday)  Poor Man’s Soup
  • (Wednesday)  Spaghetti with sauce and semi-homemade garlic bread (have French bread in the freezer that I bought for $0.75)
  • (Thursday)  Crock Pot Chili
  • (Friday)  Leftovers
  • (Saturday)  Crock Pot Fajita Quesadillas with Spanish Rice
  • (Sunday) Leftovers/ ????
