Menu Plan: 05/23 – 05/29

I don’t know about the rest of you, but school ends tomorrow!  Woohoo!  I can’t wait.  Not only will I have my kiddos home again but I’ll be able to get a little more sleep for a while which I have been sorely lacking in due to unreasonable work demands  lately. 

Yesterday was our annual “Homecoming Service” at church and we had a big pot luck dinner after the service.  I love these get-togethers!  It’s always nice to have the time to really get to talk to the other members for more than a few minutes at a time and really get to know them.  It’s nice to have a few dishes that I only get at these dinners. 

As for our menu this week, I’ve still got plenty of food around, which is good since my pay checks have been very short here lately.  I’m going to check out the sales this week since next weekend is Memorial Weekend.  I’m hoping to get in on some good sales.  I’m also carrying over a couple of meals from last week.  We ended up with extra people this weekend so I had to change things around a bit.

Anyway, here’s my menu plan for the week:

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Frozen Pizza (Sunday dinner – I was too tired to cook again)
  • 15 bean soup
  • 6-layer Country Casserole
  • Dinner @ church on Wednesday (AWANA Leadership Banquet)
  • Italian Supper Casserole
  • Chicken Casserole
  • Leftovers

Menu Plan: 05/16 – 05/22

OK – last week ended up being a bust where my menu plan was concerned, and today we ended up stopping and picking up fried chicken for lunch/dinner.   Not frugal, I know.   This week, I am determined that we stay on track.  I’ve also broke out some of my favorite cookbooks to try and change up our menu.  We tend to get into a rut during the colder months, and it’s way past time that we get back out of that rut and try some new things.  But, I am going to try to find recipes that are quick and easy as well as using ingredients that I already have on hand.  No stopping at the store midweek unless absolutely necessary.   As we try these new recipes, I will post them along with our review of them. 

 

Breakfast:

  • Amish Baked Oatmeal
  • Chocolate Cream Crepes (recipe coming soon!) or Crepes with various fillings
  • Granola bars
  • eggs, bacon, & toast

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Crock Pot Roast with veggies
  • Italian Supper Casserole
  • Hamburger Stroganoff
  • Johnny Marzetti
  • 6-Layer Country Casserole
  • Leftovers x 2

Menu Plan: 05/09 – 05/15

I hope everyone had a wonderful Mother’s day!  It’s another Monday here, except for the fact that were going to Dollywood on a school field trip today so that’s almost like having an extra weekend day!  The good thing is we already have our season passes so the only spending for us will be for gas and some food.   

Menu plan for the week will mainly be out of the pantry again this week. 

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Spaghetti with sauce
  • Meal @ Dollywood but eating sandwiches on the way home
  • Grilled chicken with potatoes(maybe baked?) and another veggie (maybe broccoli?)
  • Spicy pork chops on the grill with a couple of veggies
  • Tacos with assortment of toppings
  • Homemade pizza
  • Leftovers

Not an overall exciting week menu-wise but I’m trying to use a lot of what I already have on hand to help keep out budget under control.
