Menu Plan: 05/02 – 05/08

I never did get a menu plan done last week, but it would’ve been a bust anyway since I ended up coming down with a serious case of sinobronchitis!  Yuck!  We managed to survive, but I’m looking forward to getting back into a semi normal routine.   The kids will be home from school on Tuesday due to it being election day, so I’ll definitely have to make some goodies to have on hand for snacking.   Since the weather is warming up, you’ll probably start seeing more and more crock pot meals on my menu plans.  The nice thing about crock pots is that I can set them outside when it’s hot to keep from heating up my house! 

So, here’s my menu plan for the week will be out of the pantry:

Breakfast:

  • Amish Baked Oatmeal
  • Cinnamon French Bread Breakfast Casserole
  • Apples with peanut butter or dulce de leche (caramel dipping sauce)
  • Crepes

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Grilled hamburgers & hot dogs
  • Grilled chicken with baked potatoes (cooked in roaster oven)
  • Poor Man’s Soup (cooked in the crock pot) with grilled cheese sandwiches
  • Crock Pot Pinto Beans, potatoes, & cornbread
  • Crock Pot Chili
  • Leftovers

I’m planning leftovers at least twice this week to give me a bit more time to recoup plus get a few things done around here that need to be done.

Menu Plan: 04/04 – 04-10

Well, it’s another week!  We had a great Easter weekend.  I hope you did, as well.  It’s nice getting together with family and friends and celebrating our risen Lord!  Now, we just need to make sure that we remember His sacrifice every day of the rest of the year. 

I’m actually fixing my family a small Easter dinner tonight.  It’s something I enjoy doing and was unable to fix dinner at home this year, so we’re extending our Easter celebration by an extra day! 

I’m also trying to make do with what I already have on hand and not buy any unnecessary groceries.  This will help to keep our grocery budget down which is always a battle.   I didn’t get around to make the Poor Man’s Soup last week, so that meal will be carried over to this week.  

Here’s my menu for the week:

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Easter Dinner with extended family
  • Easter Dinner @ home – ham is the main course
  • Poor Man’s Soup with grilled cheese sandwiches
  • Spaghetti with homemade garlic bread
  • Baked potatoes with favorite toppings
  • Breakfast: pancakes, bacon, & eggs
  • Leftovers

Menu Plan: 03/14 – 03/20

Wow!  Where has the month of March gone?  I can’t believe it’s half over already!  This week and next week are going to be pretty crazy for us.  We’ve got quite a bit going on so I’m going to try & plan our meals accordingly.  The biggest thing will be Brian will be pulling 12 hour shifts starting Wednesday and at least through the weekend.  Katie has her Choral concert at school this Thursday which will be another hectic day since we have to be there by 5 p.m. 

I’m trying to eat out of the pantry this week minus more milk, juice, and fresh fruits. 

 

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Leftover chicken for dinner on Sunday
  • Spiced Pork Chops (did not make last week) and homemade rolls
  • Roast with veggies in the crock pot and homemade rolls
  • Spaghetti with Cheddar Bay biscuits
  • homemade petros (chili, cheese, & chips) with assorted toppings
  • Poor man’s soup with grilled cheese sandwiches
  • Leftovers
