Menu Plan 06/08 – 06/13

Thanks to VBS last week, I did not have to cook supper at all!  WOW!  They fed all the workers as well as the kids so that really helped me time-wise.  Since I did not have to cook last week, I will be carrying some of last weeks meals over to this week. 

Breakfast:

  • Eggs, bacon/hashbrowns, & toast
  • Homemade muffins
  • bagels with cream cheese

Lunch:

  • Sandwiches
  • Leftovers

Dinner (in no particular order):

  • Baked potato soup
  • Spaghetti with sauce, and possibly garlic bread
  • Crockpot beef stew with homemade rolls
  • Grilled steaks with baked potatoes, grilled corn on the cob, & rolls
  • ??????
  • leftovers

I’m short one meal at this point.  I can’t seem to think of something right now.  LOL.  I’ll figure out something, I’m sure.

Menu Plan of 06/01 – 06/07

Since we’re having VBS this week at church, I’m going to plan easy meals that we can “grab and go” with. It may be not be the most nutritionally balanced, but it will keep us fed and happy. This week also starts my new budget of $300! Wish me luck starting this. I should be basically set with most of my ingredients. I should only need to fill in with some fresh fruits and veggies and milk for the most part.

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner (in no particular order):

  • Refried bean burritos (using leftover pinto beans)
  • Chili
  • Baked potato soup
  • Spaghetti with sauce, and possibly garlic bread
  • Crockpot beef stew with homemade rolls

Mmmmm!!! Banana Pudding!!

At my family’s request, I made banana pudding for dessert. Unfortunately, I could not find my recipe, but I did find one at allrecipes.com that is very tasty! It’s also very easy, which makes it even better!

Here’s the recipe:
Banana Pudding IV

“A quick and easy banana pudding recipe – enjoy!”
PREP TIME 30 Min
READY IN 3 Hrs 30 Min
SERVINGS: 12
Original recipe yield 1 – 9×13 inch dish
INGREDIENTS
1 (8 ounce) package cream cheese (softened to room temperature – very important!!!)
1 (14 ounce) can sweetened condensed milk
1 (5 ounce) package instant vanilla pudding mix
3 cups cold milk
1 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
4 bananas, sliced
1/2 (12 ounce) package vanilla wafers
DIRECTIONS:
  1. In a large bowl, beat cream cheese until fluffy. Beat in condensed milk, pudding mix, cold milk and vanilla until smooth. Fold in 1/2 of the whipped topping.
  2. Line the bottom of a 9×13 inch dish with vanilla wafers. Arrange sliced bananas evenly over wafers. Spread with pudding mixture. Top with remaining whipped topping. Chill.
This is very quick and easy to make, and it tastes wonderful!!
