Recipe Swap: Spiced Pork Chops

Here’s another family favorite recipe that I made this week. My whole family LOVES these pork chops and will rarely let me fix them any other way! Since I have 3 picky eaters (hubby being one of them) this says a lot about a recipe! So, here you go:

Spiced Pork Chops

4 pork chops
1 teaspoon paprika
½ teaspoon oregano
1 teaspoon cumin
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon fennel seeds – crushed
1/8 teaspoon cayenne pepper
1 tablespoon olive oil
½ tablespoon butter
½ cup chicken broth

Mix all spices together and evenly sprinkle half over the top of the pork chops.

In a skillet, over medium-high heat, heat olive oil. Placed spiced side or pork chops down in the hot skillet. Cook about 3-5 minutes on one side till browned, but no blackened (turn down the heat if they are cooking too fast).

While chops are cooking on the first side, sprinkle remaining spice mixture on the uncooked side.

Flip them over once, finish cooking.

Remove chops from skillet and keep warm. Add butter to skillet and whisk browned bits with a wire whisk.

Turn the heat up a little, add chicken broth and keep whisking till the sauce reduces to about half. Serve the chops with the sauce on top.

FYI: Some of the spices, if you have never bought them, are a little pricy, but last a long time.

God’s Handiwork

This is what I had the privilege of witnessing this morning. Seeing all of those beautiful colors first thing in the morning or just before bed makes me stop and breathe and just say “Wow”. It reminds me of the many blessings in my life and that I have been blessed to live and witness another day.

Sunrises and sunsets have always been a weakness for me. I look at them and am reminded of how awesome God is! He truly is a master artist.

Take the time today to look around and enjoy the splendor of God’s love for us in his many creations.

Field Trip Day!

What a wonderful day I had today!  I went with my son on a field trip to see Seussical:  The Dr. Seuss Musical.  It was wonderful!  If this comes to your area, I would highly recommend it.  I wish I could have taken pictures during the production, but they were not allowed.  I did, however, get a picture of the curtain.  They did an awesome job with it!

In the play, the main story centered around the stories of Horton, (“Horton Hears A Who” &  “Horton Hatches An Egg” ), but it also combined several other stories and their characters.  Of course, you’ve got “The Cat In The Hat” telling the story, and the young man playing that role did an awesome job, as did all of the other actors.  All of the children really enjoyed the play! 

I know that, if I get the chance before it’s over, I would definitely like to take my entire family to see it!
