Our Newest Journey

I hinted about a new journey that my family & I have embarked on, and it’s time that I share it with you.  For several years now, I’ve been wanting to make a change in our eating/baking habits, but my dear hubby has been against it for a variety of reasons, one of them being hat he’s a picky eater.  His tastes have changed a bit over the years, but it is very hard for a tiger to change his stripes.  But, through God’s timing, we finally started this wonderful journey about two months ago.  It’s still a slow process since Brian is not the only one who is picky in our family.  Two out of three of our kiddos are picky.  It does make for some interesting meal times around here, even with our rule of “everyone has to take at least one bit of everything that’s fixed.”  But, this journey is going better than I anticipated!  Everyone is really enjoying all the delicious goodies that I’m baking for them!  Would you like to know what I’ve been up to & what changes we’ve made?

Yep!  That’s a L’EQUIP Nutrimill Grain Mill" target=_blank>Nutrimill Grain Mill, and I’m absolutely head over heals for it and all the, fresh,  delicious (& health(ier)) creations it’s allowing me to make! I’ve made some delicious breads, as well as cornmeal, cookies, bagels, & tortillas from the fresh whole wheat (cornmeal for cornbread) that I get from my new grain mill!  My baked goods have a wonderful, fresh taste to them that they didn’t have before.  Not to mention the fact that we are now eating foods that are even less processed/bleached, as well as we are eating the WHOLE grain, which means we are getting all of the natural nutrients that God intended when eating wheat.  Most people don’t realize that even the “whole wheat” breads/flours in the store are so processed that there’s really nothing nutritionally left in them.  Here is a great article about the benefits of grinding your own wheat, and here’s one more article on grinding your own wheat.

I’ve also made loaves of bread, hoagie-style buns, and cookies, but I don’t have pics of those, for some reason.  But, needless to say, my family is loving the new, fresh taste of the foods that I’m making.  This is just the beginning of our journey to using whole grains.  I’m also in the process of adding in other whole grains, but I’ve got to take baby steps and do things slowly.  I’ve also picked up my first bulk food order this week and am excited to really begin this journey.  Whole grains are not the only changes that have been going on.  For a while now, I’ve also been adding in more fresh fruits and veggies, as well as steaming veggies.  For years, I’ve already been doing more baking and Crock Pot ™ cooking than frying, and grilling when we can.  But, my hubby has bee and always will be a meat and potatoes man, and two of my children are just like him.  But, they are learning right along with him to try new things, and some of them they are evening enjoying.  Baby steps.  Stay tuned for future installments.  I hope to see more and more whole grains in my menu planning in the future. 

Menu Plan: 05/07–05/13

I know I’m a bit late posting my menu for the week, but better late than never!  I’ve had it made & ready to go but, for some reason, I didn’t put it on my blog.  Oh, well.  Here it is.  I spent Monday making a double batch of homemade whole wheat bagels, and they turned out deliciously!

 

Breakfast:

  • Amish Baked Oatmeal with fresh/dried fruit
  • Sausage, egg, & cheese bagels
  • Cream cheese bagels
  • Oatmeal pancakes

 

Lunch:

  • Sandwiches
  • Leftovers
  • Pizza bagels

Dinner:

  • Crock Pot Beef Stew (held over from last week)
  • Spaghetti
  • Mexican Goulash
  • Biscuits & gravy, bacon, & eggs
  • Beef Stroganoff
  • Leftover Buffet
  • Out to eat (Mother’s Day) – my family would like to take me out

Real Life Fairy Tale?

Once upon a time, there were two sisters…….. One day,their parents looked at them and realized that they were all but grown up. 

 

That’s how I feel when I look at my two beautiful daughters.  I feel like I’m watching a real life fairy tale, especially when they were preparing to go to their annual Homeschool Prom a few weeks ago.

I may be prejudice, but I think they are beautiful inside and out.  They are daughters of the almighty King, after all!!  Brian & I are so proud of the young ladies that our daughters are becoming.  Yes, we have gone (are going) through many of the teenage growing pains, but they are growing to be beautiful young ladies.  

 

Of course, we still have our not-so-little boy who is now 10 and right on the heels of his sisters in growing up.  What I would like to know is, where has the time gone, and who took my babies?  Who gave them permission to grown up so quickly?  Shouldn’t I still have little ones?

 

God is so good.  I could never thank him enough for the many blessings that my children have brought into my life.  Even though I look at them and wonder where the time has gone, I cherish each day/birthday/holiday and thank Him for allowing me the privilege of raising them.  I pray that, even through my many mistakes and faults, I can show them Jesus through me.  And I am thankful each day that I have been able to watch them grow up.  Each day is a blessing from Him.
