Menu Plan: 03/06 – 03/12

I’m loving having my menu plan & recipes  handy in a little notebook right there in my kitchen.  It has sure helped to save me a lot of time, and even the girls can help out.  Last week, I did manage to find the time to cook up my ground beef & some of the chicken, which was then divided into the portions needed for each of my meals, labeled, and placed in the freezer.  I did the same with the chicken that I didn’t need to precook.   This is another huge time saver during the week.   The first couple of meals have been requests, so maybe not the most healthy, but oh-so-good! 
Here’s what’s on tap for this week:
Breakfast:
  • Oatmeal
  • Yogurt with granola
  • Fresh fruit

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Sun:  Slow cooker Jambalaya
  • Mon:  Country Fried Steak (per Brian’s request)
  • Tues:  Biscuits & Gravy
  • Wed: Pulled Pork BBQ Sandwiches
  • Thurs:  Leftovers
  • Fri:  Bistro Chicken Twist
  • Sat: Shephard’s Pie

Another month has come & gone, and boy is February going out with a bang!  Thunderstorms all day along with tornado watches & warnings.  Plus, it feels like spring time out there!  I honestly cannot wait for the real thing.  I’m so ready for warmer weather and ready to get my hands dirty, literally.  Garden time is almost here, and I’m praying that it will be a good year for us. 

This week’s menu is pretty simple & frugal.  Here it is, in all it’s glory.

 

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers
  • Fresh fruits
  • Yogurt

Dinner:

  • Sun:  Pasta bake
  • Mon:  Homemade waffles, bacon, & eggs
  • Tues:  Creamy Tortellini 
  • Wed:  Beef Taco Ring (per request)
  • Thurs:  Leftovers
  • Fri:  Slow cooker pinto beans, fried potatoes, & homemade cornbread
  • Sat: Chicken fajita pizza using my homemade pizza crust

Michael’s 9th Birthday!

Well, I tried to declare no more birthdays for my kids by telling them that we would celebrate the day they were  born but no one was getting any older from here on out, but they just didn’t buy it.  LOL  So, on Feb. 4th, Michael celebrated his 9th birthday.  It’s hard to believe that it’s been 9 years since our precious baby boy entered our lives. 

He loves Star Wars & Legos, so that’s what we got him for his birthday.   Here are a few pics from his birthday:

Remember the Legos we got him for his birthday?  Well, he had them all put together by lunch time!  LOL  Since I was working on his cake that day for his small impromptu party, he decided he wanted to put his Legos on his cake.  Since I was working on his cake that day, that’s what we did.  I did a rough ice on it because he wanted it to look like blown “snow”.  I think it turned out looking pretty cool!

Another birthday has come & gone.  I’m very thankful that he’s growing and is healthy  and strong, but I’m so not ready for any of them to grow up.
