Menu Plan: 04/17–04/23

I knew it had been a while since I had posted, but it’s hard to believe that it’s been a month! It’s been raining at our house, both figuratively and in reality.  But, it seems like things are finally starting to settle down, which I’m very happy about.  And it’s also about time that I get back to making out a menu & sticking to it, especially since I had gone to the store & have a few things that need to be used up.  Here’s our menu plan for the week:

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers
  • Salad

Dinner:

  • Sunday:  Sandwiches & nachos
  • Monday:  Crock Pot Beef Tips & Rice with steamed broccoli
  • Tuesday:  Fried chicken with mashed potatoes, corn, green beans, & homemade rolls
  • Wednesday:  Leftovers (spaghetti if needed)
  • Thursday: Hot Dogs
  • Friday:  Our Anniversary Dinner!  Special meal planned for my dear husband of 17 years!
  • Saturday:  Easter Dinner with my side of the family (making rolls & a dessert)

Menu Plan: 03/13 – 03/19

Well, last week’s menu ended up being a bust.  We all ended up sick so nothing past Monday was used.   Thankfully, the meats that I needed had been portioned out & frozen so nothing went bad, which is definitely a good thing.   I am even more thankful that we all seem to be on the mend.  God has really blessed us this winter in that we have really missed all of the major illness & just wound up with a really bad cold-like virus.  I’m very thankful that’s all it was.  This week, I’ll continue to push the fresh fruits for breakfast & snacks.   
Here’s our menu plan for the week:
Breakfast:
  • Fresh fruits (we have mangos, apples, & oranges as of Monday)
  • Eggs
  • Oatmeal
  • Cereal
  • Yogurt

Lunch:

  • Sandwiches
  • Leftovers
  • Fresh fruits
  • Yogurt

Dinner:

  • Sun:  Shephard’s Pie
  • Mon:  Beef Goulash
  • Tues: Pancakes, bacon, & eggs
  • Wed:  Spaghetti with homemade garlic bread
  • Thurs:  Leftovers
  • Fri:  Chicken & Broccoli
  • Sat:  Cheeseburger Pie

Menu Plan: 03/06 – 03/12

I’m loving having my menu plan & recipes  handy in a little notebook right there in my kitchen.  It has sure helped to save me a lot of time, and even the girls can help out.  Last week, I did manage to find the time to cook up my ground beef & some of the chicken, which was then divided into the portions needed for each of my meals, labeled, and placed in the freezer.  I did the same with the chicken that I didn’t need to precook.   This is another huge time saver during the week.   The first couple of meals have been requests, so maybe not the most healthy, but oh-so-good! 
Here’s what’s on tap for this week:

  • Yogurt with granola
  • Fresh fruit

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Sun:  Slow cooker Jambalaya
  • Mon:  Country Fried Steak (per Brian’s request)
  • Tues:  Biscuits & Gravy
  • Wed: Pulled Pork BBQ Sandwiches
  • Thurs:  Leftovers
  • Fri:  Bistro Chicken Twist
  • Sat: Shephard’s Pie
