Menu Plan: 03/28 – 04/03

It’s Easter time again!  I love Easter!  The main reason is because of what my Savior Jesus Christ did for me(us)!  I can’t praise or thank Him enough for giving His life for mine. 

But I also love the fact that we can come together as a family and celebrate our wonderful Savior’s sacrifice for us all!  But this year will also have a solemn feel to it.  This is our first Easter without my dear mother-in-law.  I know I thank God every day that we will get to see her again one day and that we’re only apart for a time.  

OK – onto my menu plan for the week.  I’m going to keep it simple and try to use what we already have on hand. 

Breakfast:

Lunch:

  • Sandwiches
  • Ravioli
  • Leftovers

Dinner:

  • Pizza
  • Poor Man’s Soup with grilled cheese sandwiches
  • Crock Pot pinto beans with cornbread (& maybe fried potatoes)
  • refried bean burritos using leftover pinto beans
  • Crock Pot chili using leftover pinto beans
  • Leftovers
  • Dinner Saturday will be Easter Dinner with my in-laws.

Wow!  Where has the month of March gone?  I can’t believe it’s half over already!  This week and next week are going to be pretty crazy for us.  We’ve got quite a bit going on so I’m going to try & plan our meals accordingly.  The biggest thing will be Brian will be pulling 12 hour shifts starting Wednesday and at least through the weekend.  Katie has her Choral concert at school this Thursday which will be another hectic day since we have to be there by 5 p.m. 

I’m trying to eat out of the pantry this week minus more milk, juice, and fresh fruits. 

 

Breakfast:

Lunch:

  • Sandwiches
  • Leftovers

Dinner:

  • Leftover chicken for dinner on Sunday
  • Spiced Pork Chops (did not make last week) and homemade rolls
  • Roast with veggies in the crock pot and homemade rolls
  • Spaghetti with Cheddar Bay biscuits
  • homemade petros (chili, cheese, & chips) with assorted toppings
  • Poor man’s soup with grilled cheese sandwiches
  • Leftovers

I can’t believe that it’s been 2 weeks since my last post!  But, I can tell you that I’m VERY ready for spring!  The few warmer days that we’ve been having have been such a teaser!  I say that it’s time for winter to say ‘good-bye’ and for spring to say ‘hello’!  But, I just have to keep reminding myself that spring is literally just around the corner! 

With these few warmer days, I know the grilling season is just around the corner and I really can’t wait for that! Unfortunately, this week is supposed to be rainy so I’ll have to. 

Here’s my menu for the week:

  • Leftovers
  • Sandwiches

Dinner:

  • Biscuits & gravy, bacon, & eggs
  • Spiced Pork Chops, mashed potatoes, green beans, & homemade rolls
  • Crock pot pinto beans with homemade cornbread
  • refried bean burritos
  • Crock pot chili
  • Spaghetti with homemade Cheddar Bay Biscuits
  • leftovers
